In my opinion, there’s only so much fresh fruit that you can consume so why not make an orange flavoured cake? That has to count towards your five a day- right?

So thats the cake justification out of the way although we all know there’s always a good reason to eat cake!

This Jaffa drizzle cake is one of my current favourite cakes.  It is a lovely twist on the more traditional lemon drizzle cake and the chocolate topping sets it off beautifully.

Its really easy to make too although I did give myself a nasty cut when I was zesting the oranges so do take care with that bit!

If you want to give it a go- here’s what you will need:

Ingredients

  • 140g butter, softened
  • 200g self-raising flour
  • 11⁄2 tsp baking powder
  • 200g golden caster sugar
  • 3 eggs
  • 5 tbsp milk
  •  zest of an orange

For the topping

  • 4 tbsp orange juice
  • 50g golden caster sugar
  • 50g dark chocolate
  • 1 tsp butter

Instructions

  • Pre- heat the oven to 180C
  • Line a 1-2 litre loaf tin
  • Beat together the butter and sugar until pale and creamy
  • add the milk, eggs and orange zest and beat well
  • Beat in the flour and baking powder until everything is well combined
  • Pour the mixture into the lined tin and level the top
  • bake in the oven for 40-45 mins or until it springs back when gently pressed and a skewer comes out clean after being inserted
  • mix the orange juice and sugar and warm in a pan until melted
  • remove from the oven and pierce all over with the skewer
  • Pour over the orange juice and sugar mixture and allow to cool in the tin
  • Melt the chocolate and stir in the butter
  • Spread over the top of the cake

Crack the cake open and share – I bet you will love it!
