Everyone seems to be talking about the evils of sugar.  The more I hear, the more I realise that it is hidden in nearly everything.  When something is promoted as healthy and low fat, it is generally stacked with sugar which seems like a cruel joke!

I have been keen to try some sugar alternatives but not artificial sweeteners as they have nearly as bad a reputation as sugar but for very different reasons!

When I worked in the soft drinks industry, we started working with a sweetener derived from the Stevia plant which is naturally intensely sweet and therefore a perfect alternative to sugar.  It proved very challenging for a long time to get the formula right for soft drinks.  The manufacturing process has clearly improved as the sugar alternative is now available in the form of Natvia which can be used as a direct replacement, spoon for spoon, is completely natural and has zero calories.  What a result!  I really wanted to give it a try and so ordered it online.  It certainly wasn’t as cheap as sugar but what price can you put on your health and reduced calorie intake.

I decided to try these oaty peanut butter cookies and I must say, I was delighted with the results.  All the flavour with a fraction of the calories- what’s not to like?

If you want to try them, this is what you will need

Ingredients:

  • 250g crunchy peanut butter (I used Whole Earth Organic)
  • 75g large porridge oats
  • 1 egg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 6 Tablespoons Natvia (natural calorie free sweetener)

 

Instructions

Preheat the oven to 175C

Place all the dry ingredients in a mixing bowl and mix together.

Add the peanut butter and combine the ingredients (It can be a bit hard on the arms so I used an electric mixer)

Place the mix in cling film and chill for a minimum of 30 minutes

Line 2 baking trays with parchment paper

shape the mix into  flat rounds and place on the paper

Bake for 10 minutes and remove from the oven (the cookies will appear undercooked and crumbly but they will firm up when cooled)

Serve and enjoy
