I seem to have loads of maltesers in the house.  Don’t get me wrong, this really isn’t an issue but rather than consume the lot with a refreshing mug of tea, I thought it might be an idea to try to use them a little bit more constructively.

In the past, I have used maltesers in a chocolate pavlova and in traybakes but I decided to try an experiment to see how they worked out in cookies!  Happily they worked brilliantly and tasted delicious.  I took them to a coffee morning and they went down a storm.  I also froze a few to see if they would keep (and to stop greed taking over).  They were still yummy when they were defrosted so that’s a result.
They are easy to make.  If you want to give them a go- here’s what you will need:

 

Ingredients

  • 200g butter
  • 120g sugar
  • 1/2 tsp vanilla essence
  • 175g plain flour
  • 1 egg
  • 1/4 tsp Bicarbonate of soda
  • large pinch of salt
  • large bag of maltesers (crushed)
  • bar of chocolate

 

Instructions 

  • Preheat the oven to 200C
  • Line a couple of greased baking trays with greaseproof paper
  • Beat together the butter and sugar
  • mix in the egg and vanilla essence
  • stir in the flour, salt and bicarbonate of soda

  • Stir in the maltesers
  • Wrap the dough in cling film and chill in the fridge for 30 minute

  • Form into small balls and space out on the baking sheets (they will spread)
  • bake for around 10 minutes or until the cookies are gold brown at the edges

  • Remove from the oven and transfer onto  a cooling tray (they will still be very soft at this stage but will firm up)
