Making the most of having a dukan day where I can have vegetables. For dinner tonight, I spliit a small butternut squash in 2 and roasted one half in the oven.
While it was roasting, I made a chicken curry by dry frying an onion, adding water when it was sticking. I added chopped chicken breast with chilli, garlic, curry powder, garam masala and cumin.
When the chicken was sealed, I added stick made with 1/2 a low salt stock cube and allowed to simmer.
When just about to serve, I added loads of fat-free natural yoghurt to make it creamy.
It was a delicious combination!
