This dish was a bit of a gamble as I really didn’t have a plan when I started it. I started with onions and dry fried them, adding water to stop them sticking. I added chopped chicken breast and browned it. I kept stirring until the onions were nearly breaking down and forming a sauce of their own. I poured over low salt chicken stock and added a generous amount of nearly every spice I possess. It could have been disastrous but was actually really tasty. I added 1 percent fat natural yoghurt at the end and served with oatbran galettes to soak up the sauce- lovely!
