Decided to try cooking turkey breast in cajun spices. I tossed the breast in cajun spices and fried in a pan which I had sprayed with oil and wiped off. Once the meat was bown on both sides, I baked it in the oven until cooked through and then let it rest.
I served it with some cottage cheese and sliced gherkins. The other half had his with a baked potato with loads of butter and I have to confess to total potato envy. I did enjoy my own meal regardless and felt quite virtuous!
