I must admit that I normally make a blinding spag bol but this one was a dukan friendly version so was much healthier that a tradional one. I normally have a bit of grated cheese over and serve it on pasta too so this seemed very virtuous!
I simmered the sauce for hours so that it was really tender. I served it on cajun roasted vegetables which were simply made by sprinkling some cajun seasoning over some peeled and chopped vegetables and cooking in the oven
This was a nice healthy option in advance of a birthday weekend full of eating, drinking and making merry! – well every effort helps!!
