This is a really simple accompaniment which is so easy to make and can be shoved in the oven while you prepare the rest of the meal. Its pretty tasty too.
To make it all you will need is a selection of vegetables. This particular selection is sweet potato, red and yellow pepper, red onion, courgette and butternut squash.
Simply coat with a little olive oil and season with salt and pepper. Cook for around one hour, turning them every now and then to stop them sticking and ensure and even colour.
I have to say – this is a really easy way of getting your 5 a day!
