This is one of my favourite dishes and it never fails to disappoint.  It really is very simple with chicken breast stuffed with Boursin cheese, wrapped with parma ham and baked in the oven.  You can vary the filling but in my opinion, the Boursin works best!

To make them, make a slice in the chicken breast to make a pocket.  Take a chunk of the boursin cheese and squeeze it into the pocket.  lay out 2 slices of parma ham (you may need 3 to completely cover the breast).  Wrap around the chicken and cheese to fully enclose.

Lay on a baking tray and cook at 200C for 45 minutes.  When they are ready, some of the cheese will be oozing out.

Melt the remaining boursin with some milk and heat through for a sauce

Serve with potato and vegetable of your choice.

Invite some good friends around, open a bottle and enjoy!
