I love decorating cakes.  It’s a great excuse to bring out my inner child and get creative.  I usually use fondant icing to create stuff for the top of the cake and it is real throwback to a childhood spent playing with play-dough.

As it was my niece Anna’s birthday, I decided to tackle a gravity defying cake for a change as I think they look amazing.  I was surprised by how easy this was to do.  The best thing is that you can use any cake as the base as all the work is in the decoration.

For this I used a chocolate sandwich cake but really, any cake will do.  As the cake is sandwiched with butter cream, I made an extra quantity.  (the general rule for butter cream is 2 quantities of icing sugar for one of butter.  Simply beat them together until the mixture is pale and creamy)
To do this cake all you have to do is:

  • Cover the entire cake with butter cream
  • stick chocolate fingers around the sides ( I needed 3 packets)

  • Pour the sweets of your choice onto the top of the cake, making sure there are enough to cover the top (I used 2 bags of m&ms)

  • Secure 3 skewers with an elastic band, keeping the band at the top where it wont be seen
  • use melted chocolate to fix m&ms to one side of the skewers.  Allow to dry

  • repeat this process until the skewers are completely covered with the sweets
  • Insert the skewer into the cake at an angle and top with the empty bag to appear as if the sweets are pouring out of the bag

Once finished, this cake looks really impressive.  Give it a go- I hope you love the results
