Avocado pasta

A recipe and instructions for an easy to make avocado pasta.. It's vegetarian, totally delicious and you will definitely want to make it again!


🥑 This avocado pasta is simple but very tasty! If you think avocado should only be eaten cold- think again!

🥑 This is simply the flesh of an avocado, blended with oil, lime, basil leaves, sea salt and ground black pepper then added to cooked pasta and topped with grated parmesan. So quick and easy! You can adjust the seasoning of your avocado sauce if needed, before you add it to the pasta

🥑 I have to say, we loved it and I will definitely be making it again. Next time, I’m planning to add some smoked salmon as to me, avocado and salmon is a dream combination!

  • Pasta
  • The flesh of 1 avocado
  • 2 tbsps oil
  • Juice of a lime
  • A handful of basil leaves
  • Sea salt and ground black pepper to season ore you add it to the pasta
  • Grated parmesan cheese to serve (switch for an alternative if you want to keep it vegan)

 

  • Cook you pasta in boiling water with a pinch of salt
  • While the pasta is cooking, place the avocado, basil, lime and some salt & pepper in a food processor and blend
  • When the pasta is cooked, drain and stir the avocado mix through it
  • Serve topped with parmesan cheese
