Delicious Chicken Satay Skewers

A recipe to make delicious chicken satay skewers. These are super easy to make and are perfect with rice and salad or served on flatbreads.


I completely love love love Chicken Satay.  Its just so tasty!  This dish is a firm favourite and is always well received when I serve it.  

I absolutely adore peanut butter, so much so that when I buy it for a recipe, I have to ensure that I use any left over in cookies to stop me lavishing it on hot toast!

While peanut butter may not be good for the waistline, peanuts do offer a wide range of health benefits:

  • They are good for heart health
  • They contain lots of protein
  • They are an excellent source of Vitamin E, Niacin and Folate

Its really quite easy to make. I like to make the sauce the day before to let the chicken marinate overnight. You will also need bamboo skewers which you should soak in water before using.

I served my sauce in individual ramekins but you can opt to just pour the sauce over the skewers.

 If there is any left, it freezes well and is really good spread over flatbreads and topped with any left over chicken and salad!

This dish really is worth trying- it’s totally YUM!

  • 500g chicken breast (cut into chunks or strips)
  • 2 Tbsps soy sauce
  • 5 Tbsps peanut butter
  • ½ Tsp chilli flakes
  • Zest and juice of a lime (keep half the lime juice to one side)
  • 1 clove garlic (minced?
  • 1 tbsp honey
  • 1 inch piece of ginger (peeled and grated
  • 2 Tsps curry powder
  • 1 tin of coconut milk

 

 

  • Set half the lime juice to one side
  • Mix all the ingredients (except for the chicken and reserved lime juice) in a bowl and mix well until everything is combined and the mixture is smooth
  • Place the chicken chunks in a bowl or container and add 1/3 of the peanut mixture and mix well
  • Cover and chill for a few hours or overnight if you can
  • Thread the marinated chicken onto skewers (if using bamboo or wooden skewers, it’s a good idea to soak them in water first to stop them burning)
  • Cook under the grill or on the BBQ
  • Heat the remaining sauce in a pan
  • Add the remaining lime juice just before serving with the chicken skewers
