Chickpea & butterbean patties

Tuesday, March 24, 2020

A delicious recipe for spicy chickpea & butterbean patties. They are delicious but super healthy as they are baked instead of fried. Healthy, vegetarian and gluten-free. Only 100 calories each too!

I’m totally delighted with these and anyone who has trialled them for me seems to have loved them. They are definitely a new favourite in the Eating Ideas household!

If there is anything in the list of ingredients that you don’t have, feel free to replace it with anything else.  The beauty of these patties is that you can use anything.  I’ve made them with kidney beans too but the chickpea and butterbean combination works really well.

  • 400g tin of chickpeas (drained)
  • 400g tin of butterbeans (drained)
  • 1 onion (peeled and finely chopped)
  • 1 clove garlic (peeled and chopped)
  • 2 medium carrots (peeled and grated)
  • 2 tbsps tahini
  • 50 sundried tomatoes (chopped)
  • 1 tbsp sesame seeds
  • 1 tbsp pine nuts
  • 1/2 tsp chilli flakes
  • 1 tbsp soy sauce
  • 60g  gram (chickpea) flour
  • 1/2 tsp salt
  • Place all ingredients in a food processor
  • Blitz together until well mixed
  • Sprinkle some gram flour on a board and shape into patties (should make at lease 12)
  • Bake in the oven at 200C for around 30 minutes or until golden and piping hot
  • Serve and enjoy
