My friend, Molly, and I were experimenting in the kitchen and decided to try making a baked alaska.  This was a favourite of mine as a child but I haven’t tried one since.  We decided to make one with a twist and used Jamaica ginger cake (mainly because there was one in the cupboard that needed using up)  It actually worked really well and the warmth of the ginger really complemented the cold of the ice cream and the sweetness of the meringue.
To make it all we needed was the following:

We sliced the ginger cake and moulded it into the dish.  We then topped with the vanilla ice cream and moulded it into shape.  To make the meringue, we whisked 3 egg whites with 175g caster sugar and spread it over the ice cream, taking care to make sure that all the ice cream was covered.  We baked it at 200C for 4-5 minutes until it was golden brown.

Our one criticism was that we used too much ice cream for the amount of meringue.  Apart from that, it was delicious!
