Homemade lemon curd

A recipe for homemade lemon curd. So easy to make and delicious too! Perfect on toast or in homemade desserts like lemon meringue pie or lemon mousse.


When life gives you lemons… make lemon curd!⁣

Lemon curd is one of my favourite tastes from childhood. My mum used to make it and I loved it served on toast or better still, in a lemon meringue pie!⁣   I haven’t made it for a long time but when I tasted the beautiful lemon curd in the @titanichotelbelfast afternoon tea, I was inspired to make it again!⁣

It’s surprisingly easy to make. All you need is lemons, butter, sugar and eggs. ⁣ Happily, I have a constant supply of eggs, thanks to my pet hens, the KardashiHens!   If you have been making meringues with egg whites, this is a perfect way to use up the leftover yolks.⁣

* 2 large lemons ⁣
* 4 large egg yolks ⁣
* 100g caster sugar⁣
* 50g butter cut into cubes⁣



* Place all the ingredients in a heat proof bowl over a pan of simmering water⁣

* Stir continuously for around 10 -15 minutes, the butter will melt and the mixture will thicken. It should coat the back of a spoon when it is ready. it will continue to thicken in the jar⁣

* Pour into.a sterilised jar and keep in the fridge⁣
