Delicious and easy lemon cheesecake

the best recipe for a tasty no bake lemon cheesecake. Easy to make and super delicious to eat . Definitely one to try- you wont be disappointed!


Just thinking about cheesecake makes my mouth water.  It’s rich, not too sweet and easy to make.  Best of all, you can switch it up with lots of different flavours, fruits, chocolates, sweets and more- all can be make into cheesecake.

I have experimented with lots of different flavours but my go to favourite is the classic lemon cheesecake.  It’s just perfect.  Slightly zingy from the lemon, crunchy from the base and a light and fluffy filling!  What’s not to like?

Give it a go and let me know how you get on.

  • 260g pack of chocolate hobnobs or chocolate digestives (Crushed into crumbs)
  • 60g butter (melted)
  • 1 tbsp runny honey
  • 180g tub of Philadelphia cheese
  • 85g sugar
  • 200ml carton of double cream
  • Zest of a lemon
  • Juice of half a lemon
  • 1 flake to decorate

 

 

  • Mix together the crushed biscuits, butter and honey
  • Press into a greased spring form tin or individual dishes
  • Place in the fridge to chill
  • Mix together the cream cheese and sugar
  • Add the cream and whisk until the mixture firms into soft folds
  • Stir in the lemon zest and lemon juice
  • Pour over the biscuit base and return to the fridge to chill before serving
