A recipe for Salsa Verde

A recipe for a simple but delicious salsa verde. A perfect accompaniment for practically everything. All that and it's healthy too!


This salsa verde or green sauce is one of my absolute favourites.

Its so tasty and goes with practically everything- meat, fish, vegetables, tacos, burritos and more. All that and its pretty healthy too!

Its very easy to make and simply bursts with flavour. Traditionally, it is made with tarragon, but I really like the combination of mint, basil and parsley. They just seem to work really well together.

My recipe is below.

 

• Bunch of parsley
• Bunch of mint
• Bunch of basil
• 2 shallots (finely chopped)
• 1 clove of garlic (crushed)
• 2 tbsps capers
• 2 tbsps chopped gherkins
• 1 tbsp dijon mustard
• 2 tbsps apple cider vinegar
• 4 tbsps rapeseed oil
• Pinch of sea salt

 

  • Place everything in a food processor and blitz until not quite smooth
  • Add a little more apple cider vinegar & salt if needed
  • Store in an airtight container
