Spinach, feta and pomegranate salad

This salad is so easy to make and yet its super tasty. A great addition to any meal. It's a new favourite in Eating Ideas Towers!


The flavours, textures and colours just work really well, all bound together with a tasty rapeseed oil and balsamic dressing- Yummy!

Give it a try and let me know how you get on.

  • One bag of spinach leaves
  • 200g Feta Cheese
  • Pomegranate seeds
  • 1/2 a small red onion (peeled and sliced very thinly)
  • handful of pecan nuts (Walnuts will work just as well)

For the dressing

  • 2 Tbsps Balsamic vinegar (I used Burren Balsamics but any brand will do)
  • 1 Tbsp rapeseed oil (I used Broighter Gold)
  • Pinch of ground black pepper
  • Wash and dry the spinach leaves and place in a bowl
  • Crumble the Feta and sprinkle over the leaves
  • Add the pomegranate seeds, red onions & pecans 
  • mix together the oil, balsamic and pepper
  • Pour over the other ingredients and mix well
  • Serve and enjoy!
