Its a little known fact that I used to work for Pizza Hut many years ago and if I am honest, I didn’t eat pizza for years after.  Its not that I don’t like it- its just that it feels really heavy and just seems so unhealthy with the doughy base. I had read about pizza made with a cauliflower base but that just seemed wrong so I thought I would try to make one using courgettes.  I wasn’t overly confident about this but was surprised and delighted by the results.  The finished pizza was light and tasty and when served, you honestly couldn’t tell that the base was made of courgettes. I urge you to give it a go- I definitely will be making it again

To make it you will need the following ingredients:

Courgette base

  • 2 large courgettes (grated)
  • 50g cheddar cheese (grated)
  • 50g gram/ chickpea flour (you can use normal plain flour- just double the quantity)
  • 2 cloves garlic, pressed or minced
  • 3 tsp dried oregano
  • 1 tsp basil
  • 2 eggs, beaten
  • 1/2 tsp salt

Homemade Pizza Sauce

  • 1 small onion (finely chopped)
  • 1 tin chopped tomatoes
  • 1 tblsp vegetable oil
  • 1 garlic clove, (finely chopped)
  • 1 tsp dried oregano
  • 1 tsp Italian seasoning
  • salt and pepper to season

Instructions

  • make the pizza sauce by frying the onion in the oil until soft,  add the tomatoes and seasoning an leave to simmer

  • Grate the courgettes, place in a clean tea towel and squeeze out the moisture

  • Mix all the ingredients in a bowl

  • Grease a baking tin and press the mixture into the tin

  • Bake at 180C for around 20-30 minutes or until the base has turned golden brown

  • Add the tomato sauce  along with any toppings you choose and top with grated cheese

  • Return to the oven and cook until the cheese is golden and bubbling

  • Serve and enjoy
