This Pataks Madras curry paste makes a delicious curry without all the hassle of grinding the spices. I have tried a few of the varieties and am keen on the balti too but this one is a favourite as it is just a tad stronger.
Made with a blend of coriander, cumin, chilli, turmeric, ginger, tamarind and garlic, it has a lovely red colour and tastes delicious. The bst thing about it is that if it tastes too hot, some natural yoghurt will cool it down but leave the full flavour.
I travelled round India many years ago and love the food there. I wasn’t lucky enough to get to Madras, now called Channai, but that doesn’t stop me being a fan of the region’s speciality spice combo.
I used this with some chicken, onion and yoghurt and topped with some chopped spring onions
