My friend told me that she was planning to serve me Chilli stew and my heart sank! Chilli is one of my all time favourite foods and I didn’t think it was a good idea to mess with it.
She made a normal chilli with beef mince, onion, kidney beans, tomatoes, chilli and cumin. So far so good I thought!
She then peeled and par boiled swede and carrots and added them to the pot with a tin of chickpeas. I still wasn’t convinced.
After it had simmered for a while and the vegetables started to break down, I had to eat my words!
This had become a proper earthy stew with plenty of bite and as opposed to normal stews that can be a bit bland, this had a real kick.
A definite surprise winner in my book! Who knew?
