Regular readers will know that I am ever so slightly obsessed with cheese on toast. There are just so many ways to make it. It has been my favourite conversation starter for years. What type of bread? what type of cheese? grated or sliced? the list goes on
I recently met Simon Dougan, Chef at award winning Yellow Door at a Fivemiletown Cheese event. What a lovely man he is! I grabbed my opportunity to ask him my favourite question and happily he obliged. He did admit to stealing his recipe from his wife but thats ok with me. I will warn you- its a controversial choice! I know someone whose perfect cheese on toast involved a grilled soda farl, thick slices of cheddar and marmalade! Can’t say I’ve tried it….
I can’t say I like the sound of the Chef’s recipe but my favourite is grated cheddar, mixed with cottage cheese and mayonnaise. Delicious!!
