I was always brought up to never judge a book by its cover and that’s certainly the case with celeriac. Underneath that gnarly and knobbly exterior is a beautiful, nutty flavoured, powerhouse of a vegetable!
Its super versatile too- you pretty much can do anything with it that you would do with a potato– mash, roast, chip, rosti etc. but with a much healthier result!
Best of all, it’s super nutritious. Here are my top 5 health benefits of the humble celeriac:
1. It’s packed with vitamins and minerals- vitamins B, C & K, zinc, potassium, iron, calcium & phosphorous to name a few
2. It’s full of antioxidants which can strengthen your immunity and protect you from illness
3. It’s good for your bones. It contains lots of vitamin K which is essential for bone health
4. Its good for your heart- vitamin C and potassium have both been found to have excellent benefits for the heart and the vitamin K can help reduce calcium build up in the arteries.
5. It can support the digestive system- its very high in fibre which helps keep the gut healthy and supports the digestive system
Not converted yet? What if I tell you it’s low in fat and calories too. Better still, it tastes great!
Are you a celeriac fan?
I chop up the leaves and dehydrate them for soups.
Great idea!!
