If there’s one thing I can’t stand, its being cold. When I got home this evening I could barely feel my toes for the cold. On a night like that there is nothing I love more than some warming comfort food.
Tonights comfort meal of choice was a simple balti made with chicken breast, onion, pataks balti paste and low fat yoghurt. Recently I have just been using spices in curries to keep them low fat but you just can’t beat a good paste for a really well rounded flavour. It helps the texture of the sauce too. I usually add tomatoes and mango chutney too but kept this one really simple. It was still delicious!
