Making late night potato cakes with Louise!

My good friend, Louise invited me to stay with her after a fun night with friends at the Sanctuary Spa in Covent Garden.  Despite the healthy theme of the evening, several glasses of bubbly were consumed and it turned into a rather late night.  Louise had been researching impressive breakfasts for us to try out and had opted for these delicious spring onion potato cakes.  When we got home, we checked the recipe and as they need to be be chilled before cooking, we decided to prepared them with a final night cap so that they would be ready to cook in the morning.  Our prep paid off as they looked just perfect from the fridge the next day and they tasted wonderful served with fried, sliced beef tomatoes.  I will definitely try these again.

To make them you will need the following:

3 small potatoes
3 spring onions, chopped
1 egg yolk
50g cheese, grated
Chopped parsley
Seasoning

Boil and mash the potatoes

Mix in all the other ingredients

Use flour on hands to shape the mix into 4 patties

Chill for a minimum of 30 minutes (or overnight as we did!)

Cook in a lightly oiled pan for a minimum of 5 minutes on each side to make sure they are hot throughout
