Roasted spicy butternut squash seeds

I normally give the seeds from the Butternut squash to my pet hens as apparently they are very good for their digestion.  This week, however, I am doing the #Surviveon20 challenge for Wifi Refugees.  I have to live on a food and drink budget of £20 for a week as that’s what 100’s of refugees have to survive on.  With that in mind, I decided not to waste any potential food source and tried roasting the seeds in spices for a delicious snack.  I tossed them in a little oil with smoked paprika, cumin and salt.

I have to say, these were really delicious and I will definitely be making them again.  The hens will just have to miss out!

  • butternut squash seeds
  • a few sprays of oil
  • spices to coat (I used smoked paprika, cumin and a pinch of salt)
  • remove any flesh from the seeds
  • Spray with oil
  • toss in the seasoning
  • spread on a tray
  • roast in the oven at 180C for 20-30 minutes or until the seeds start popping and are golden brown
  • Serve and enjoy
