Its February, its cold and I’m bored of healthy eating. Time for a bit of mushroom fun! I made these little babies as nibbles served on cocktail stick sbut they are just as good served with salad and potato wedges. They are really easy to make too!
All I did was the following:
Remove the stalks from the mushrooms and discard half of them. Finely chop the rest and fry with some chopped bacon
Mix in a bowl with finely chopped spring onions and grated cheddar cheese
Season with black pepper (they shouldn’t need salt as the bacon and cheese are both salty)
use a teaspoon to fill the mushrooms and place on a baking tray
Bake in the oven at 180C for about 20 minutes until the cheese is golden and bubbling
Serve and savour- they really are yummy!
