I love cheesecake! Regular readers will know that its one of my all tine favourite puddings and there are very few flavour combinations that I won’t try. Salted caramel is bang on trend at the moment so I thought I would try it in a cheesecake. I was a bit worried that it would be far too sweet so I cut down the sugar it normally needs and added the raspberries to cut through the sweetness.
I am a massive fan of entertaining at home but each occasion carries a certain element of risk. No matter how well prepared I am, there is never a guarantee, especially with a new recipe and even less with one that you have made up! I am a gambler at heart though and reckon that its worth the risk for a great new dish. I was delighted with the results of my salted caramel cheesecake. I served it to friends and every bit was eaten- Result!

Ingredients
- 1 packet hobnob biscuits
- 100g butter
- 1 tin caramel
- 1 carton of philadelphia cheese
- 250ml carton of whipping cream
- 1 tablespoon icing sugar
- 1 carton of raspberries
- 1 tsp sea salt flakes
