Think beetroots are just for pickles? Think again- They’re an absolute powerhouse of nutrition. They are loaded with vitamins and minerals and low in calories and fat.
What’s more, they are delicious and easy to add to your diet.
I have been growing them in the garden and looking for ways to use them. I decided to try them as crisps but baked instead of fried to make them a healthy option.
I sliced them with a mandolin (you can use a sharp knife if you don’t have one). I then tossed them in a little oil (I used @broightergoldrapeseedoil) and salt.
I placed them on a lined baking tray and baked at around 150C for 30-40 mins until crispy and slightly brown. Be sure to watch closely past the 15 minute mark as they can burn quickly.
I then removed from the oven, allowed to cool then served.
So simple, tasty and healthy- well worth a try!
