• 1 head of broccoli
• 1 banana shallot (very finely chopped)
• 50 g gram/ chickpea flour
• 50g grated parmesan
• 2 eggs
• 1 tbsp natural yoghurt
• 1/2 tsp salt
• Ground black pepper
• 1 tbsp Za’atar (or seasoning of your choice)
o Preheat the oven to 180C
o Blitz the broccoli in a food processor until it is in small pieces (or use a grater)
o Place in a bowl and add all the other ingredients
o Mix well
o Shape into patties (top tip: line the lid of a jar with cling film and use as a mould)
o Place on a lined baking tray and bake in the oven for 15 minutes
o Flip them over and bake for another 10 minutes
