The recipe & instructions are detailed below.

• 250mls water
• 75g butter
• 1/2 tsp salt
• 100g plain flour
• 4 eggs
• 150g grated Gruyère
• Large pinch grated nutmeg
  • Preheat the oven to 180C
  • Place the water, butter and salt in a pan and bring to a simmer
  • Tip in all the flour and beat together until the mix s coming away from the sides of the pan and forming a ball
  • Set aside to cool for 5-10 minutes then beat in the eggs, one at a time
  • Add the cheese & nutmeg and mix well
  • Pipe or spoon small balls onto a lined baking tray
  • Flatten any pointy bits with your finger dipped in water
  • Bake for 20-25 minutes until puffed up and golden
  • Set aside to cool
