When the sun comes out, we all go a bit barbeque crazy and food really does taste better al fresco!
If you are planning a barbeque and are bored of burgers then these skewers are for you. They are mildly spiced but not overwhelming and are really tender. They are a kind of “burger lolly” for want of a better description. I was introduced to them at a family barbeque and I have to say they are now a firm favourite
They are easy to make and even easier to eat! To make them you will need the following (serves 8):
- 2x 500g packs of lean minced beef
- 8 Spring onions, trimmed and finely chopped
- 3 tbsps jerk seasoning
- pinch of Salt and pepper
- Olive oil spray for cooking
- 24 bamboo skewers (soaked in water overnight)
Instructions
- Place all the ingredients in a bowl and mix well by hand to ensure everything is combined
- Shape large tablespoonful around one of the skewers and form an oval shape around 5cm long.
- Repeat with the rest of the mixture to make 24 skewers
- Spray the beef with olive oil and cook on the barbeque for 12- 15 minutes turning occasionally until they are cooked through and brown in colour
- Cover the skewers with foil if they start to burn
If it starts to rain, you can always cook these under the grill
