A friend of mine had mentioned that she had seen a picture of these Cheesecake strawberries on Pinterest and they sounded lovely. I definitely thought they were worth trying, even if they looked a bit fiddly and time consuming. The basic idea is to hull the strawberries (taking away a bit more than you normally would), pipe in the cheesecake mix and dip into the biscuit crumbs.
To make them you will need the following:
LArge strawberries
200g carton of cream cheese
Carton of whipping cream (whipped)
1/2 cup of icing sugar
1/2 teaspoon vanilla essence
6 hobnob biscuits (or digestives if you prefer)
Instructions
Hull the strawberries (create a hole in the centre of the strawberry for the mixture)
Beat together the cream cheese, icing sugar and whipped cream. Add the vanilla essence. Place the mixture in a piping bag
Pipe the mixture into the strawberries
Dip the strawberries into the biscuit crumbs and chill in fridge
Serve to your guests.
I had a mixed response to mine with some people loving them and some people hating them. I used some of the leftover mix and strawberries to create a cheesecake style dessert. I placed sliced strawberries in a bowl, topped with the cheesecake mixture and sprinkled over the biscuit crumbs. This version proved much more popular which led me to conclude that life really is too short to stuff a strawberry!!
