This is a lovely Chicken Korma recipe that my sister makes quite often. I think she originally got it from a Jamie Oliver recipe book so the credit must go to him!
Having said that, Jamie Oliver has never served this to me but my sister has, and most recently today. For that reason, I am including it here.
It is well known that I love all types of curry and this was no exception. Its a very mild variety but full of taste
Chicken korma
800g chicken breast cut into pieces
2 onions (finely sliced)
1 fresh green chilli (halved, deseeded and finely chopped)
Small bunch of coriander (leaves and stalks separated)
Small piece of ginger (peeled and chopped
400g tin of chickpeas (drained)
Vegetable oil
A knob of butter
1/2 jar of pataks korma paste
400ml tin of coconut milk
2 heaped tablespoons dessicated coconut
Sea salt and ground pepper
Add a spoonful of oil to the pan with the butter
Fry the onions, chilli, ginger and coriander stalks until golden
Add the curry paste, coconut milk, chickpeas, chicken and dessicated coconut
Half fill the empty coconut milk time with water and pur into pan. Stir
Stir regularly adding more water if needed
Season with salt and pepper if required. Scatter the coriander leaves over the top
Serve with rice, naan bread and poppodoms.
