Happy St Patrick’s day one and all. As a proud native of the Emerald Isle, I am always staggered by the level of Global celebrations in the name of good Saint Patrick. It amazes me that the celebrations around the world are so massive!
Nothing says “Ireland” more than potatoes and it is that fact that inspired me to make some potato cakes. These never fail to please and have to be the most understated potato dish of all time!
They are so easy to make and are an excellent way of using up left over mashed potato. I have to say that every time I make these, I wonder why I haven’t made them sooner.
If you want to have a go- its really simple. All you need is the following:
Ingredients
Some mashed potato
a couple of spring onions (or scallions if you are really embracing Ireland)
salt and pepper to season
some flour to bind and shape the cakes
vegetable oil to shallow fry
Instructions
All you have to do is mix the mash, spring onions and salt and pepper
sprinkle a generous amount of flour on a board or work top. Coat your hands with the flour too
shape the mix into pattie shapes using the flour to help them hold their shape
Chill in the fridge for a minimum of 30 minutes (I usually chill them overnight)
Heat the oil in a shallow pan and fry until golden brown
Serve with whatever you fancy and enjoy!
