The nice folk at Mash Direct are running a Great Mashed Veg off competition, asking people to make meals using their products and share them on social media using the hashtag #Mashedvegoff.
I have been creating a few different recipes and these Halloumi, Chilli baby potato and red pepper kebabs are my favourite so far. They are so easy to make. Just thread the ingredients onto skewers and grill or cook on the BBQ. Halloumi is quite amazing. It’s the only cheese that can be cooked but still keeps its shape and doesn’t melt away. Better still, it’s delicious. These are ideal for people who are vegetarian, gluten-free or who just like tasty meat-free alternatives!
All you need is the following:
A packet of Mash Direct chilli baby potatoes (you can use any cooked baby potatoes)
1 red pepper
1 packet of Halloumi cheese
skewers (soak them in water for a while to stop them burning)
