How to make home made Jaffa Cakes

After enjoying a heated debate about whether a Jaffa Cake is a biscuit or a cake, I decided to have a try at making them from scratch.  Not the most obvious thing to try to recreate but I do enjoy a challenge.


To make matters more interesting, three of my oldest friends, Sharon, Gillian and JoJo were coming round for coffee and I knew for a fact that at least 2 of them weren’t the biggest fans of the Jaffa cake.  The challenge to impress them with my version was on!

Having made my fail-safe chocolate and orange marble cake as a back up in case it all went wrong,  I set about my task.  I have shared the recipe below and I have to say that I was pleasantly surprised by how good they were.  Best of all, I got a resounding thumbs up from the girls!

Ingredients

  • 50g plain flour
  • 50g caster sugar
  • 2 eggs
  • a packet of orange jelly
  • 1/2 pint boiling water
  • 100g dark chocolate
