Lentils are a firm cupboard staple in Eating Ideas Towers. They are cheap, low fat and an excellent source of protein, fibre, vitamins and minerals. Best of all, they count towards your five a day!
I have been experimenting with these flatbreads and they are really tasty. They are super easy to make but you do need to prepare the lentils in advance. I say prepare but all you have to do is soak them in water. I used 150g lentils and 300mls water (this is enough for 2-3 flatbreads, depending on the size and thickness you make them).
You need to leave them for at least 12 hours. I generally soak them overnight. Then all you have to do is blend the lentils with the water they were soaking in. Don’t drain any of the liquid away.
Heat up a non-stick pan (you can add a little oil if you want). The mixture will be quite thick, so spoon it in and use the back of the spoon to spread it across the pan.
Cook for a few minutes until the underneath is golden then flip it over and cook the other side.
Serve with whatever toppings you have to hand. I used cream cheese, baby cucumbers, spring onions, radishes, pomegranate seeds, sea salt and ground black pepper.
