5 health benefits of mushrooms and a recipe for an easy mushroom soup

I love soup, all kinds of soup. It's just so versatile with so many flavour combinations. This recipe for mushroom soup is a new favourite. It's easy to make and delicious too. Check out the health benefits of mushrooms too!


Anyone else love mushrooms?  They are not just tasty and satisfying but good for us too!  Here are my top 5 reasons to love the humble mushroom:

  1. They are low in calories- always good for the waistline!
  2. Like humans, mushrooms produce vitamin D when exposed to sunlight. They are the only vegetable source of this vitamin.
  3. They are high in anti-oxidants, normally the territory of brightly coloured fruit and veg.
  4. They have loads of vitamin B2 (riboflavin) and B3 (niacin).
  5. They are an excellent source of iron.
  • 200g white mushrooms
  • 200g chestnut mushrooms
  • 1 tbsp oil
  • 1 onion
  • 1 tbsp Dijon mustand
  • 3 tbsps plain flour
  • 500mls stock
  • 1 bay leaf
  • salt and pepper to season
  • Finely chop the onion and mushrooms
  • Heat the oil in a pan and fry the onion and mushrooms
  • add the Dion mustard and flour and mix well
  • Slowly add the stock and bayleaf and bring to a simmer
  • Remove the bay leaf
  • Blitz until smooth
  • Season as needed and add water if it is too thick
  • Serve with a swirl of creme fraiche
