This was a total experiment but even if I say so myself, it was a great success. A few years back, I travelled through some parts of Malaysia. I absolutely loved the local cuisine and have often tried to recreate some of the flavours. When I saw this Laksa paste, I knew that it would be delicious. It has a delicate blend of aromatic ingredients including lemongrass, mixed spices and lightly flavoured with chilli
I’m not sure why it occurred to me to try this in burgers but I just thought that it would make a nice combination and I have to say that I was right! they had a lovely fragrant spice taste with just a bit of an after kick! The mango yoghurt dressing was cooling and made the perfect balance for the dish. I served these to some friends with a delicious Tricolore salad and they really enjoyed them. This is definitely one recipe that I will try again
the recipe and “how to” video are below:
for the burgers
500g minced beef
half a red onion, finely chopped
1 egg
2 tbsp Laksa paste
For the mango dressing
250ml natural yoghurt
2 tbsp mango chutney
To make
add the onion, egg and laksa paste to the mince and mix well.
Shape into burgers and fry in a small amount of oil until brown
place on a baking tray, cover with foil and place in the oven (preheated to 200C ) for 20- 30 mins
remove from the oven, remove the foil and check that they are cooked through with no pink bits
add the mango chutney to the yoghurt and mix well
serve the burgers with the dressing
