This is a delicious curry recipe that my sister serves and I love! The recipe originally came from a Jamie Oliver recipe book but I suspect that she has made a few amendments along the way. It has become a bit of a family favourite, served with rice and naan bread. Apparently, we are not alone in this as Chicken Tikka Masala is now one of the UK’s favourite dishes
To make it you will need the following:
4 chicken breasts, skinned and chopped into bite size pieces
1 chilli, finely chopped
2 onions, peeled and chopped
inch long piece of fresh ginger, peeled and grated
a bunch of coriander, separate the leaves and chop the stalks
1/2 jar of Pataks tikka masala sauce
tin of tomatoes
tin of cocnut milk
200g natural yoghurt
vegetable oil
Salt and pepper to season
to make the Chicken Tikka Masala:
heat the oil and add the onions, chilli, ginger and coriander stalks and cook for 10 minutes.
Add the chicken and tikka masala paste
Add the tomatoes and coconut milk, add water to the can to get the remains out, add to the pan and stir well
Bring to the boil then reduce heat to simmer
Cook for 20 minutes, stirring regularly and add water if necessary
When the meat is cooked and tender, taste and add salt and pepper to season, if needed
Serve with rice and naan bread
