A recipe for Pomegranate Salmon & some health benefits of this oily fish

Pomegranate salmon is an easy but impressive main course that looks beautiful and tastes delicious. It's a real crowd pleaser.


Pomegranate salmon- So tasty but easy to make. The combination of pomegranate molasses & soy makes a lovely sweet and sour flavour, complemented by the pomegranate seed salsa. It really is yummy!

  • 4 Salmon fillets
  • 2 tbsps pomegranate molasses
  • 2 tbsps soy sauce
  • Pomegranate seeds
  • Juice of a lime
  • 1/2 red onion (finely chopped)
  • 1 small bunch of parsley (finely chopped)
  • 6 mint leaves (finely chopped)
  • 1/2 tbsp oil
  • Mix the pomegranate molasses, soy sauce & 1/2 the lime juice and add the salmon to marinate, cover & chill ( I put it in a sealed bag and leave in the fridge)
  • Heat the oven to 200C/ 180 Fan
  • Mix the pomegranate seeds, parsley, mint, onion, oil and remaining lime juice and set aside
  • Place the salmon fillets on a baking tray, skin side down
  • Brush over any remaining marinade
  • Bake in the oven for 10-12 minutes of until cooked (stick a sharp knife in and make sure the fillets are flaking apart)
  • Serve with your chosen side dish
