Anna, who lives in Glasgow, has submitted this recipe and picture to Eatingideas. She made a Jubilee cake to celebrate the Queen’s Diamond jubilee. It looks absolutely delicious and I cant wait to try it out. I particularly like the way that the fresh fruit makes it look like a healthy choice
To make it, she based it on a BBC recipe for Victoria sponge detailed below:
Ingredients:
8oz softened butter, 8oz caster sugar, 4 medium eggs, 2 tsp vanilla extract, 8oz self raising flour, a drop of milk.
Instructions:
Preheat oven to 180C.
Grease cake tins
Cream butter and sugar together until pale and fluffy
Beat in eggs a little at a time and add vanilla
Fold in the flour and add a little milk to give a soft consistency
Divide mixture into cake tins (Apparently Anna only used 1 cake tin then cut it in half)
Bake for 20-25 mins, golden brown and clean skewer Sandwich cakes together with strawberry jam and add whipped double cream and fruit to the top.
