Baileys Cheesecake

A recipe for the most delicious Baileys cheesecake. It’s easy to make but totally indulgent and always goes down a treat!


Baileys Cheesecake? Oh yes- it’a a winner! If you make this, you definitely won’t look back!

I love experimenting with cheesecake flavours and there’s no end of flavours to play with!

Looking at a bottle of Baileys, what was my first thought? Put it in a cheesecake! I have to say it was a lovely combination.

I like making the base mixture with ginger biscuits which give it a much warmer flavour than the usual digestive base. I can honestly say this is my most requested cheesecake!

I made individual cheesecakes using metal rings but it works just as well as one big one!

If you want to make it, the recipe is below.

  •  Add the melted butter to the biscuits and mix well
  • Press into a greased springform cake tin (or individual tins) and chill in the fridge
  • Whip the cream and set to one side
  • Whisk the cream cheese and sugar together until smooth and add the Baileys.
  • Add in the whipped cream mixing until it is all combined.
  • Pour the mixture over the base (or bases) and chill in the fridge until set (at least a couple of hours or ideally overnight)
  • Remove from the tin (or tins) and top with the chocolate
  • Serve & enjoy
