Baileys Cheesecake

A recipe for the most delicious Baileys cheesecake. It’s easy to make but totally indulgent and always goes down a treat!
Baileys Cheesecake? Oh yes- it’a a winner! If you make this, you definitely won’t look back!
I love experimenting with cheesecake flavours and there’s no end of flavours to play with!
Looking at a bottle of Baileys, what was my first thought? Put it in a cheesecake! I have to say it was a lovely combination.
I like making the base mixture with ginger biscuits which give it a much warmer flavour than the usual digestive base. I can honestly say this is my most requested cheesecake!
I made individual cheesecakes using metal rings but it works just as well as one big one!
If you want to make it, the recipe is below.
- 250g Ginger biscuits (crushed)
- 100g melted butter (I used @dromonamakesit )
- 180g pack of @philadelphia_ukicream cheese
- 75g Icing sugar
- 250mls whipping cream
- 50 mls @baileysofficial
- 2 @cadburyuk flakes or 100g grated chocolate
- Add the melted butter to the biscuits and mix well
- Press into a greased springform cake tin (or individual tins) and chill in the fridge
- Whip the cream and set to one side
- Whisk the cream cheese and sugar together until smooth and add the Baileys.
- Add in the whipped cream mixing until it is all combined.
- Pour the mixture over the base (or bases) and chill in the fridge until set (at least a couple of hours or ideally overnight)
- Remove from the tin (or tins) and top with the chocolate
- Serve & enjoy
