1 red onion chopped 2 carrots roughly chopped 2 courgettes quartered length wise and cut into chunks 1 pint chicken stock 1 teaspoon smoked paprika salt and pepper to season bring the stock to a simmer add all ingredients cook until vegetables are soft remove half the soup and blend to a puree add back […]

salt and pepper to season
bring the stock to a simmer
add all ingredients
cook until vegetables are soft
remove half the soup and blend to a puree
add back to the soup
add more water as required
