bored of your usual breakfast? Try this recipe for coconut, lime and raspberry ripple pancakes made from Vita Coco coconut milk alternative- delicious and dairy-free!
Vita Coco have launched a new coconut milk alternative. I have tried lots of milk alternatives and I can honestly say that this is the first one that I have actually liked and I really like it! My only experience of coconut milk to date has been the kind that comes in a can which usually comes out as a lump of coconut cream and some coconut water. This is completely different with a proper milk consistency that is both versatile and delicious.
I decided to use it in dairy-free pancakes and after much humming and hahhing, settled on my flavour combination of coconut, lime and raspberries. The end result was delicious and I will definitely be making these again. A much better breakfast than my normal porridge!

Ingredients
- 500mls Vitacoco milk alternative
- 200g plain flour
- 1 egg
- 1 tsp sugar
- 200g raspberries (set some aside for serving and cut the rest into 2 or 3
- zest of a lime (Reserve 1/2 for garnishing)
- coconut cream/ coconut yoghurt to serve
