Was feeling hungry and was challenged by wanting comfort food thats a bit naughty but also wanting to be healthy. I had some roast chicken left over from my Roast chicken dinner so challenged myself to make a healthy version of Coronation chicken. I have to say it was a triumph (well to me anyway- some one else may not have been so keen.) I made a sauce with a tablespoon of low fat mayonnaise, 2 tablespoons fat free yoghurt, a table spoon of mango chutney, teaspoon of tomato puree and 2 teaspoons of curry powder. I mixed it all together, stirred in the chopped chicken and seasoned to taste. Assembled it all on a bed of leaves, peppers and tomatoes. I really enjoyed it!!
