A recipe for Cranberry & Cinnamon Granola

This is a healthy but easy to make granola with oats, cinnamon, cranberries and lots of healthy ingredients. It's super tasty too!


I am a great believer in everything in moderation. Good friends will know that I enjoy some unhealthy nosh but also eat some very healthy food. I love a drink but also exercise so it’s all a case of getting the balance right.


My general policy is if I am eating out, enjoy whatever I fancy but when at home, and make an effort to be healthy (except over Christmas!!!).


Having said that, sometimes there are things that we eat every day and have no idea how unhealthy they can be. Breakfast cereal is the case in point. I have become increasingly aware that even the healthiest looking breakfasts can be loaded with sugar. Porridge is a safe bet but sometimes, it’s just too dull!


With all this in mind, I set about making a healthy granola. The one barrier is that most of them have sultanas or raisins that I really can’t bear so I wanted to find an alternative.
What I came up with was cranberry and cinnamon with maple syrup, vanilla and a whole host of really healthy and delicious ingredients.


If you want to give it a go- here is what you will need (feel free to add or omit at your pleasure)

  • 250g oat flakes
  • 100g pecans
  • 50g flax seeds
  • 50g whole almonds
  • 50g pumpkin seeds
  • 3 tbsps. coconut oil
  • 4 tbsps. maple syrup
  • 4 tsps cinnamon
  • 1 tsp vanilla extract
  • 100g dried cranberries (you can switch for an alternative)

  • Preheat the oven to 180C
  • Place the cranberries in a food processor and pulse until they are chopped up roughly. Set them to one side
  • Place the pecans and almonds in the food processor and blitz into small chunks
  • Place in a large bowl with all the other dry ingredients (make sure to leave out the cranberries)
    Melt the coconut oil with the maple syrup and vanilla in a pan
  • Pour the oil mix over all the dry ingredients and coat well
    Spread over baking trays and roast in the oven for approximately 30 minutes or until golden and toasted. Make sure to keep turning the mixture as it will burn easily, particularly the nuts
  • Allow to cool and mix in the chopped cranberries 
  • Store in airtight containers
  • Serve and enjoy!
