If truth be told, I am not the biggest fan of fish.  I really try but just struggle with both its taste and texture!  I have managed to wean myself onto 2 types of fish- smoked haddock (because the smokey flavour masks the fishiness) and salmon (because of its mild flavour)

I struggle to make fish interesting but the thought of a slab of fish on my plate leaves me cold so I try to flavour it up a bit whenever possible.  I know that you are probably asking the question- “if you aren’t fussed on fish- why do you bother eating it?”.  Well the answer is that I really believe in the health benefits of fish.  The  fact is that fish is a superfood. Packed with vitamins and minerals, and a major source of omega-3 fatty acids, fish can help to protect against a range of diseases, from cancer to heart disease, depression to arthritis. I want a piece of that!!

So, determined to reap the health benefits of fish and increase the variety in my diet, I took my salmon fillets and pondered on what to do with them.  I ended up with this lovely cheesy, crunchy combination which was a good complement to the soft, flakiness of the cheese.

To make it you will need:

  • 4 salmon fillets
  • 10 Tuc crackers (or similar cheesy cracker)
  • 4 tablespoons of grated parmesan
  • 2 tablespoons of chopped flat parsley
  • 2 tsps lemon juice
  • 2 heaped tablespoons natural yoghurt

Instructions

  • lay the salmon fillets on a baking tray
  • In a bowl, mix all the other ingredients
  • spoon the mixture onto the fillets and pack down tightly
  • Bake in the oven at 200C for 30 minutes or until the cheesy mixture is golden and bubbling
  • Serve with mixed vegetables

 

Now just relax and let the superfood benefits do their work!!
